Drying and curing

A grower can do everything right for twelve weeks and undo it in four days. Drying and curing are where harsh, hay-smelling flower comes from, and where the aroma you built in the room either survives or evaporates. This guide covers what is physically happening, the numbers most growers work to, how to know when a dry is done, and the failure modes worth recognising early.

What drying is doing

Two things happen at once. Free water leaves the tissue, which is the part everybody thinks about. At the same time, enzymes that are still active in the cut plant continue breaking down chlorophyll, starches and other compounds that taste bad when burned. That second process is slow and it is the reason a fast dry produces flower that smells green and tastes sharp even when the moisture content is correct.

Working against you is volatility. Terpenes evaporate continuously and they evaporate faster when it is warm. Every hour you shorten the dry by adding heat costs aroma. This is the central trade-off and there is no way around it.

The rate of water loss is governed by temperature and humidity together, not by either alone. A room at 20 degrees and 60 percent relative humidity dries faster than a room at 15 degrees and 60 percent, because warmer air holds more water and the vapour pressure gradient is steeper. Thinking in terms of that gradient, rather than chasing a humidity number, explains most of what otherwise looks contradictory in dry room advice.

Room targets

The widely used commercial and hobby target is roughly 15 to 18 degrees Celsius with relative humidity in the high fifties to low sixties, in the dark, with gentle air movement that does not blow directly on the flowers. At those conditions a hang typically takes somewhere between seven and fourteen days depending on density, load and airflow.

Those are conventions, not physics. Plenty of experienced growers run cooler and slower and argue for it, and some commercial dry rooms run a deliberate humidity ramp rather than a fixed setpoint. What almost nobody defends any more is the warm fast dry, because the result is consistently worse.

Two practical points matter more than the exact setpoint. Keep the room dark, because light degrades cannabinoids in drying material as readily as in stored material. And keep air moving around the hang rather than across it, so that humid air does not sit in pockets where mould starts.

NoteWhatever numbers you choose, stability matters more than the value. A room that swings between 45 and 70 percent humidity will produce an uneven dry no matter what the average reads.

Whole plant, branches, or bucked

Hanging whole plants slows the dry because the stems hold water and release it gradually. That is the argument for it. The argument against is that it takes far more space and the interior of a dense plant dries unevenly.

Hanging cut branches is the common compromise and behaves predictably. Bucking the flowers off the stem first and drying them on racks is the fastest of the three and the least forgiving, because the buffer the stems provided is gone and the flowers can go from too wet to too dry within a day.

Wet trimming before the dry gives a tidier finish and dries faster. Dry trimming, where the leaf stays on through the hang, slows moisture loss and protects trichomes from handling while the material is at its most fragile. Growers split roughly along the line of whether they value appearance or aroma more, and both positions are defensible.

Knowing when the dry is finished

The stem snap test is the traditional method: the small branch inside a bud should snap rather than bend. It is crude, it is subjective, and it is what most people use.

The measurement commercial operations use is water activity, written aw, which reports how much of the water present is free rather than bound. The accepted safe and stable window is about 0.55 to 0.65 aw, which corresponds to roughly 10 to 12 percent moisture content by weight. Below that the flower is over-dry and brittle; above it, microbial growth becomes a real risk. Meters that measure it are no longer expensive, and they replace an argument with a number.

A useful habit either way is to seal a sample in a jar and come back in a few hours. If a hygrometer in the jar climbs well past the mid sixties, there is more water in the flower than the surface suggested.

The cure

Curing is what happens after the dry, in sealed containers, when moisture redistributes from the interior of the flower to the surface and the slow enzymatic breakdown continues. The dry sets the moisture level. The cure evens it out and improves the smoke.

The common working target is around 62 percent relative humidity inside the container, which is why two-way humidity packs are sold at that figure. Jars are filled to roughly three quarters, left in the dark, and opened periodically to exchange air and release moisture, daily for the first week or so and then less often as readings stabilise.

Most of the improvement shows up over the first two to four weeks, and many growers report continued gains over a few months. Beyond that the benefit flattens and terpene loss becomes the dominant process, so at some point storage is simply storage. Cold, dark, airtight and full is the goal after that.

The failure modes

Almost every bad outcome at this stage is one of five things.

  • Too fast or too warm. Produces a hay or fresh-cut-grass smell that no amount of curing removes.
  • Too dry. Brittle flower, powdered on handling, and terpene content already gone. Rehydrating restores moisture but not aroma.
  • Mould. Caused by high humidity, dense flowers, poor airflow or jarring material that was not dry enough. Material that has visibly moulded is not salvageable.
  • Light exposure. Degrades cannabinoids throughout both the dry and storage. Clear jars on a shelf are a slow loss.
  • Uneven loads. Dense top colas and thin lower buds finish days apart. Dry them separately if you can.

What to take away
